Wine & cheese tasting with estate tour & dinner in Florentine Chianti
The wine and cheese tasting experience with dinner at Corzano e Paterno will begin with a tour of the farm, delving into its history which dates back as far as the Etruscans. Surrounded by verdant and stony hills, running alongside the ancient Via Cassia, you will discover the estate’s vineyards, the wine cellar and the wine-making process. Then you will tour the “caseificio” or dairy, as well as the cheese storage cells, uncovering the secrets behind the family cheese-making process that they have been perfecting for the last 20 years.
Following the tour, you will sit down in the farm shop courtyard for an evening ‘aperitivo’ tasting of four of the estate’s wines, cheeses and olive oil, as well as local Tuscan bread and honey.
An intimate dinner in the farm-to-table restaurant
Keep in mind that the tasting is merely a delicious warm-up to the main event — a 3-course sit-down dinner in the estate’s restaurant a 10-minute drive away! Set in a beautifully restored “fienile” or hayloft, with plenty of modern finishes, you will get to savour antipasti, 1 primi plate, 1 secondo and a dessert (drinks excluded). Seasonal vegetables all come from the farm’s organic garden, while the meat is all locally sourced.
Examples of primi dishes on offer include; caprese with fresh sheep cheese, artichoke carpaccio with pecorino cheese, and ricotta and spinach gnudi with sage butter. Savour sumptuous secondo’s like tagliatelle with farm lamb ragu, pork medallions with Vinsanto sauce or the classic parmigiana di melanzane for veggie lovers, followed by a dessert of ricotta cheesecake or panna cotta.

About Fattoria Corzano e Paterno
Growing from medieval foundations, on Etruscan ground, Fattoria Corzano e Paterno has been in the family since 1969. Prior to that, it hadn’t changed hands for more than 700 years. The farm now takes its name from Corzano and Paterno, the two hills that make up the estate, just a short hop from the Chianti Classico region.
Fattoria Corzano e Paterno produces a range of typical Chianti wines, ranging from 100% Sangiovese, to reds blended with Canaiolo and smooth foreign varieties like Cabernet Sauvignon and Merlot. In a year, the family tends to produce one white Trebbiano wine, a rosé, four reds and a sweet wine.
They have been producing cheese here since 1992 exclusively from the milk of their Sardinian sheep. Over the years they have produced more than 15 types of Tuscan cheese, from traditional Pecorino to a luxurious Blu.
Schedule details
Private tours begin at 4.30pm. The experience will start with a tour of the farm, vineyards, wine cellar and dairy followed by a seated ‘aperitivo’ tasting of the estate’s wine, cheese, olive oil and local honey. Guests will then sit down for a 3-course farm-to-table dinner at the estate’s restaurant nearby.

Please note that cheese production finishes for the year around the end of August so there is less to see and taste on mid-September tours. The restaurant can also be opened upon request for private lunches for groups of min. 12 people.
